Whole fermented Japanese plums

Umeboshi plums are fermented Japanese plums. They are a traditional Japanese delicacy with a distinct sour-salty flavor that is marinated in sea salt. They have been used in Japanese cuisine for millennia and resemble an apricot rather than a plum. Mash and add to sauces, salad dressing, sushi, cooked vegetables, or rice.

Interesting:
During the time of the Samurai in Japan, plums, along with rice and beverages, were given to the soldiers as a method of preventing them from tiredness so that they could perform better in battle.
