Baking soda is also called sodium bicarbonate and is mainly used as a leavening agent in the preparation of baked goods (bread, pastries, etc.). It can also be used as an additive in the preparation of raw legumes, for reducing the cooking time. Baking soda neutralizes the acidity of tomatoes. In order to display its fermenting properties (to be used as a leavening agent), baking soda must be in contact with an acidic component (cocoa, honey, dairy product, sugar, fruit, vinegar, lemon juice, etc.) and under the influence of heat (above 70°C).
In homemade cosmetics, sodium bicarbonate can be added to deodorants, masks and other cosmetics or used as a substitute for household cleaners.
Directions for using Baking Soda:
Mix 1 tsp. baking powder with 1/4 tsp. baking soda (1 tsp for 400g of flour). Use baking soda in the recommended doses (small amounts). Adding larger amounts of this ingredient will not lead to more leavening of the final product, but you run the risk of it acquiring a rather salty, peculiar taste and dark brown colour. We recommend that you add baking soda at the end of the preparation of your culinary products.
