Description
Panela is a type of sugar considered as the purest, natural, handcrafted, unrefined and unbleached, made directly from the juice extracted from sugar cane. Panela is from Colombia and is generally much consumed in Latin America. As for panela taste, it is caramelized and has a much more refined sugar sweetening power. It is highly beneficial as it holds a unique production process so that brown sugar preserves the natural flavor and all its nutrients. The method used by artisans is basic. They use mills to extract juice from sugar cane and then it spread in large containers. The fresh cane juice comes pouring into the first container in the row where it bubbles down and reduces by about 50% before the workers start transferring it to the second, smaller container. As it gets passed from one container to the next, it goes form being a pale, off-white liquid to a rich, thick, deep caramel brown with bubbles that slowly rise and pop like tar.
Directions for use:
Panela has exactly the same uses as refined sugar we all know. Therefore it can be used with all kinds of sweets and desserts, tea, coffee, chocolate, yogurt, milk, smoothies, juices, jams and syrups.
