Amaranth contains more than three times the average amount of calcium and is also high in iron, magnesium, phosphorus, and potassium. It’s also the only grain documented to contain Vitamin C.
Directions:
Soaking in water for 10-12 hours perfectly preserves it's nutritional profile. Do not keep it in temperature beyond 20 degrees.
Put a cup amaranth along with 3 cups of water in a pan. Wait for the water to boil, then leave the amaranth to simmer for 20-25 minutes / until the water evaporates /. You can stir occasionally to avoid lumps, which can leave the seeds raw. Add the remaining chopped products and spices.
