The fruit of the coriander plant contains two seeds which, when dried, are the parts that are used as а dried spice. When ripe, the seeds are yellowish-brown in color with longitudinal ridges. They have a fragrant flavor that is reminiscent of both citrus peel and sage. The Latin name for coriander is Coriandrum sativum.
The use of coriander can be traced back to 5,000 BC, making it one of the world's oldest spices. It is native to the Mediterranean and Middle Eastern regions and has been known in Asian countries for thousands of years.
Fruits of the plant contain from 1 to 3% essential oil whose main component is linalool, which gives the specific aroma of coriander. It further comprise up to 20% fatty oil, up to 17% protein, and small amounts of alkaloids. Coriander contains little amounts of coumarins and flavonoids. Seeds are a good source of fiber, iron, magnesium and manganese.
Directions for use:
To season soups, sauces, dressings, marinades and dishes. Combines well with the flavor of allspice, cloves, bay leaf, oregano, onion, garlic and pepper.
