Wheat and gluten free, these unusual noodles are made with black rice, which turns deep purple on cooking. Black rice is particularly nutritious containing five times more protein and minerals than ordinary white rice and are rich in iron, calcium, zinc, manganese, selenium and B vitamins.
How to cook:
Put the noodles in a saucepan with almost boiling water. Bring to boil and simmer on moderate temperature for 4-5 min, drain and cool with cold water. Then, the noodles can be fried in a mushroom and green onions mixture. Add tofu.
