Polenta is a traditional Italian dish and it is essentially cornmeal boiled into a porridge. Polenta is cooked by simmering in a water-based liquid, with other ingredients or eaten with them once cooked. It is traditionally cooked in a huge copper pot known in Italian as a paiolo. Cooked polenta can be shaped into balls, patties, or sticks, and then fried, baked, or grilled until golden brown. Rich in starch, polenta successfully replaces nutritionally and culinary pasta, rice and potatoes.
Use:
Serve it instead of pasta, rice or potatoes. Uncooked polenta makes a delicious addition or gluten-free alternative to flour in cakes, biscuits and pastries. Cakes made with polenta tend to be moist and dense with a pleasantly grainy texture.
