Jasmine rice, sometimes known as Thai fragrant rice, is a long-grain variety of rice that has a nutty aroma and a subtle pandan-like flavor caused by 2-Acetyl-1-pyrroline. Jasmine rice is originally from Thailand. The grains will cling when cooked, though it is less sticky than other rices as it has less amylopectin. White jasmine rice is shiny white, has a jasmine aroma, contains the important omega-3 fatty acids and melatonin, which helps with sleeping.
Use:
Jasmine rice can be prepared in the same manner as regular white rice although it usually requires less water. Place the rice in a pot. Add enough water to cover the rice by 3/4 inch. Bring the rice to a boil, uncovered. Turn the heat down to the lowest setting. Cover and simmer until the rice is cooked through (about 20 minutes). Remove the rice from the heat and allow to sit, still covered, for at least 10 minutes. Jasmine rice is especially light and fluffy when steamed as opposed to boiled.
